A Little Something Sweet

We have been having my parents over for dinner on Sundays lately, so I'm always trying to come up with something different to serve. This past weekend, being a holiday weekend, I wanted to make dinner and dessert a little extra special.


For dessert, I had my heart set on cheesecake. I didn't want to use my standard chocolate swirl cheesecake recipe and I didn't want to fool around with using my springform pan, so I combined a few recipes to come up with a version I could bake in a 9 x 13 cake pan. I used a shortbread style crust instead of a traditional graham cracker crust. It was fast and easy and baked up beautifully without a single crack in the top. Even if you're new to baking cheesecake, you can make this one and look like a pro!



Creamy Cheesecake

Shortbread Crust:
  • 2/3 cup butter

  • 2/3 cup brown sugar

  • 2/3 cup finely ground pecans

  • 2 cups flour

Cheesecake:

  • 32 oz. cream cheese (room temperature)

  • 1 cup sugar

  • 1/2 cup milk

  • 4 eggs

  • 2 1/2 teaspoons vanilla extract

Preheat oven to 350 degrees.

Crust: In a medium size bowl, cream together the butter and brown sugar. Stir in the flour and finely ground pecans until coarse crumbs form. Press into the bottom of a 9 x 13 inch baking pan and bake for 15 minutes, or until lightly browned. Set aside to cool.

Cheesecake: In a large bowl, beat cream cheese and sugar together until well blended. Add milk, eggs and vanilla extract until well mixed. Pour over cooled crust and bake at 350 degrees for 30 - 35 minutes. Center should be set and edges just beginning to brown.

Cool completely and refrigerate before serving.


This piece is topped with caramel ice cream topping, but it is also delicious served plain.

My mom never was a great cook growing up, but she could make a mean cheesecake (maybe growing up so close to NYC helped?). Yours looks really good, reminds me of mom :)

I've made cheesecake before as I have a springform pan, but I made some cheesecake squares before, caramel apple cheesecake squares, a recipe by Paula Deen. It was enjoyable to make and it tasted like cheesecake, and was pretty easy to make. I may have to try your recipe though. Yum!

i have never tried to make cheesecake because the whole spring-y pan thing makes me nervous. this recipe might have just opened up a whole new world for me!

Skip Breakfast And Have An Adventure

Bugging Out

Spring is such a wonderful time of year.  The birds have returned and greet each morning with their lovely songs.  The tree branches are covered with green buds ready to burst into life.  The grass has shed it's yellow/brown pallor in favor of a lovely emerald.  The air is warm and breezy.  It's all so lovely except for one thing.  The bugs. Because of our nearly uninhabitable climate during the winter months, we don't see many bugs from late October through early April.  I almost forget how much I hate them until they come back.  And they know I hate them so they taunt me.  Ever since the thermometer hit the 60 degree mark, we've had flies congregating around the back porch.  I can't sit out there and enjoy my morning coffee without having them buzz past me. Public Service Announcement

I'm not quite ready to come back yet, but I wanted to take a few minutes to post my version of a Public Service Announcement.  As many of you already know, I've been away from blogging due to illness.  However, what you may not know is that the illness is H1N1.  Yep, the Swine Flu. I can honestly say that I've never felt so terrible in my life.  I had heard that for most people, H1N1 is no worse than the regular seasonal flu.  I guess I'm not most people.  After 15 days, I'm only now beginning to feel slightly human.  I was unable to get vaccinated because our area ran out of vaccine months ago.  I understand that it has recently become available again, but it's too late for me.  It's not too late for you, though.  If the vaccine is available in your area and you haven't gotten it yet, I beg you to drop what you're doing and take your family to get vaccinated.
