It's Friday night, so you know what that means.....the Friday Night Drink Demo! Tonight's drink is light and tropical. Here it is.
Island Sunset
1 1/2 oz. coconut rum
4 oz. cranberry juice
1 oz. coconut cream
In a cocktail shaker or blender, combine all ingredients. Shake well or blend until coconut cream is incorporated and mixture is frothy. Pour over ice and serve. Enjoy responsibly, please!
~Note~ Coconut cream (not coconut milk) can be found with other bottled drink mixes.

This one is different! It's pretty! Don't know how I would do with the coconut/cranberry combo, though. Sounds interesting!
I drink vicariously through your Friday night posts. It's pathetic, I know...but I look forward to them. Keep them coming!!!
Also, I was going to comment on Purple Hoodie Chick's blog, but her comment button seems to be broken. I don't know if it's her new layout or what...maybe it's just me. Perhaps you could pass it along to her!!!!
I love the color, this would be perfect for a Pampered Chef party I am hosting!! Coconut rum is a favorite of mine. Who thinks up the drinks? Do you take turns?
Raoulsygirl - I know coconut and cranberry sounds like an odd combination, but the taste reminds me of sherbet. I'm glad you like the drink posts. We enjoy creating them.
I told PHC about her comment button. She's trying to figure out how to fix it.
Donna - This is a perfect drink for your party! It will seperate after a while with the pink foam rising to the top and the darker pink liquid on the bottom, but that looks equally pretty.
The process for deciding what drinks to make changes from week to week. Sometimes we want to use what we have, sometimes we want to try something new. It's usually pretty collaborative. We've made some duds, too. I just don't post them! The spiced rum/mixed berry daquiri was really bad!!
Oh My Gosh! Thats so pretty! If I was old enough to drink i dont know if i would even want to drink it but just look at it. lol
